If a class that you are interested in is sold out, don't be discouraged! A wait list is kept for all classes and often space opens up, sometimes in advance and sometimes at the last minute. If this is an option for you, please get on the wait list for any class that you would like to attend.
There is no obligation or payment required until your spot is secured. And I've been known to add an extra day of class, when possible, for an extra popular class. Those on the wait list get first chance!

Using the bountiful offerings of the season we will make a delightful selection of scrumptious dishes and then relax and savory them at an elegantly appointed table in the garden! Swedish Braided Breakfast Bread, Asparagus Soup with Parmesan Custards, Smoked Salmon Deviled Eggs, Lady Marmalade Chicken Salad, Cappuccino French Toast with Coffee Cream, Cheesecake Apple Salad, Mini Crab Cakes with Tomato-Ginger Jam, Caramelized Brioche Toast, Cornflake-Chocolate Chip Biscotti and a Sparkling Cucumber-Mint Gin Fizz.

Pasta, the ultimate comfort food! In this class you will learn to make some favorite classics along with new recipes, cooking skills and techniques. We will make fresh pasta, cheese and homemade sauces, but we will also utilize some wonderful prepared ingredients. Our fabulous Italian menu will include such dishes as, Ricotta & Arugula Stuffed Mushrooms, Mediterranean Veggie Filled Italian Ravioli, Grilled Caesar Salad, 30 minute Bolognese Orecchiette, Drunken Pappardelle Pasta with Italian Sausage & Peppers, Calamarta Pasta with Pancetta, Radicchio & Ricotta, and a lovely Salted Caramel Panna Cotta for dessert. All to be accompanied with a variety of Italian wines.
Everyone’s Favorite - Pizza! $50 per person

This traditional Italian dish of yeasted flatbread topped with sauce and cheese had morphed over the years to include - everything! Pizza’s popularity seems to grow each year, along with a seemingly endless number of options. We will make Fall Pear, Walnut & Cheese Appetizer Pizzettes, Portobello Mushroom “Pizzas,” Greek Pizza with Homemade Hummus, Caesar Salad Pizza with Spicy Chicken, “Big Mac” Cheeseburger Pizza, Savory Autumn Spicy Sausage & Sweet Potato Pizza with Maple Cream Drizzle, Watermelon Dessert Pizza and a Chocolate Raspberry & Hazelnut Pizza. A fruity Sangria our refreshing beverage!
High Altitude Baking - Pies & Pastries $50 per person

As we head into the fall and holiday season our thoughts naturally turn to baking. Here in the White Mountains our high altitude can create some anxiety. And although cakes present the most high altitude challenges, at this time of year pies and pastries are more traditional. In this class you will learn the basic tips and techniques of pastry baking as we concentrate on making a variety of crusts, fillings and shapes, such as, Rustic Fennel Red Onion and Potato Galette, Butternut Squash & Mushroom Tart, Fall Fruit Crostata, Mexican Chocolate & Mixed Nuts Pie with Cinnamon Gelato, Vanilla Pear & Pecan Pie, Mile-High Apple Pie, Gelato Profiteroles with Kahlua Sauce and Lemon Meringue Tarts. A refreshing cocktail or wine will be offered.
Baby It's Cold Outside $50 per person

When the weather gets chilly its time to light a fire, turn on the stove and savor the joys of cooking, preferably with someone special! We will make a variety of seasonal dishes that will carry you through the holidays and beyond. Warm Reuben Pumpernickel Crostini, Fontina Apple & Prosciutto Grilled Cheese Bites, Curried Pumpkin Soup, Cranberry & Walnut Stuffed Pork Loin, Maple & Thyme Parker House Rolls with Maple Butter, Twice Baked Sweet Potatoes with Meringue Topping, Maple Roasted Beets with Goat Cheese & Pistachios, Black Bottom Sweet Potato Pudding Pie, or a Chocolate Pinon Nut Torte. Wine or a warm cocktail will be served.
Holiday Baking $50 per person

Baking for the holidays is such a classic tradition. And even today with our busy lifestyles and convenience foods when it comes to the holidays we are drawn to pull out the cookie sheets and favorite old-time recipes. But if you are ready for a few new ones this class is for you. Mini Stilton & Rosemary Cheesecakes with Pecan Crusts, Roasted Pears with Oatmeal Raisin Crumble, Pistachio & Tart Cherry Mexican Wedding Cookies, Cranberry Pear Galette with Pecan Crust, Chestnut Meringue Pie, Salted Chocolate Caramel Clusters, Macadamia Macaroon, Pomegranate Cheesecake Tartlets, Savory & Sweet Rosemary Shortbread and a stunning Classic Yule Log. A light salad and holiday cocktail will complete our menu.

I just wanted to drop you a note to let you know how much I enjoyed your cooking class on wed. 07 with Opal and the other ladies that attended. I was told by a couple of my other friends whom have attended previously what fun they had and I agree with them.
